Help, my coffee and walnut cake sunk in the middle!?
twice!... this is the reciepe im following: Heat the oven to 170C/fan 150C/fan 3. Line a deep 18cm loose-based or springform cake tin. Beat the butter and sugar together with electric beaters and then beat in the eggs, flour and baking powder.
Beat in 1 tbsp of the coffee mixture and then add up to another tbsp little by little until the mixture drops easily off the spoon. Keep the rest of the coffee mixture for the icing.
I use an electric hand blender for caster sugar and butter and then beat the rest of the ingrediants with a fork... should i use the blender on all the ingrediants... could this be where i am going wrong? I didint open the oven early, it didnt even rise in the middle... only around the edges???
The coffee 'essence' is making the mixture too wet it's a common mistake people make, try mixing whisking coffee granules with the eggs and leave for a few minutes until fully dissolved before adding to mixture
